Steamed sticky rice with banana
(Good traveling food)
Ingridients
1 1/3 cups sticky rice, soaked 3-4 hours (or all day if that's how your schedule works)
2 1/4 cups coconut milk
1/2 tsp salt
1/4 cup granulated sugar
5 small bananas, each about 4" long, cut in half lengthwise, or longer bananas cut to 4"
banana leaves or tin foil
Directions
1. Drain the sticky rice and place it in a scaucepan with the coconut
milk. Bring up to simmering point, stirring constantly until the rice
has just absorbed the liquid - about five to ten minutes. At this
point the rice will be half cooked. Stir in the salt and sugar, then
remove from the heat and let cool.
2. Make ten rectangles about 8x10 inches out of banana leaf or ting
foil. Place two tablespoons of half cooked rice on each rectangle,
flatten gently, then place a half-length of banana on top of each.
Wrap up tightly.
3. Place folded-side down in the upper compartment of a steamer and steam for half an hour. (Unfortunately, you cna't use a rice cooker for this. If you have a steamer, you are all set. I I have done this using a collander that fits nicely over a pot with a lid. things get gross and mushy if the collander is actually sitting IN the water, but things get burned if there is too little water. It is a delicate balance). Serve in leaf or foil wrapping, hot or cold.
